Deep frozen DVI is concentrated and standardized frozen cultures of lactic acid microorganisms.

Advantages: 

-  convenience and flexibility;

- easy to handle; no activation or treatment prior to use;

- possibility of customized culture blends.

 

Appearance:

 Water-soluble pellets, approximately 3-5mm diameter, cream-coloured.

 

Activity/technical data:

The total number of viable cells(lactic acid bacteria)in pellet cultures is minimum - 1*10^10cfu/gram

 

Microbiological contaminants*:

Non-lactic acid bacteria: < 100 cfu/ ml

Enterobacteriaceae: absent in 10 ml

Yeast and Moulds: <10 cfu/ml

L. monocytogenes : absent in 1 ml

*according to international standard test methods (IDF)

 

Storage:

The quality of DVI is guaranteed until the expiry date mentioned on the packing, provided it is continuously stored at -45C or lower.

 

Package/Dosage:

Gable-top carton box(Pure-pack) of 0,5 or 1 litre. The content of the cartons depends on the kind of culture and its activity. It can vary from 100 to 1500 units.

 

Stadard dosage:

 1 unit for 10 litres milk.

CSK food enrichment has developed a large range of starter cultures. It contains the following DVI cultures in pellet:

- mesophilic

- thermophilic

- probiotic

- propionic

- special cultures for accelerated ripening/pronounced aroma

Defined strains and mixed strains can be supplied separately or in blends to provide tailor-made systems to suit any individual application.
